I was really going for a super quick Friday night dinner with this one. Because I was feeling especially lazy and I couldn't even be bothered cooking some chicken, I just grabbed a smoked chicken breast from the supermarket. I was really surprised by how well this worked with the other flavors of this pizza.
I use wholemeal pitas to increase the fiber content of my recipe - but of course any type of pita would do.
Chili Chicken Pita Bread Pizzas
Makes 4
4 wholemeal pita breads
8 Tbsp tomato paste
1/3 Cup grated Mozzarella cheese
300 g sliced smoked chicken breast (or any cooked chicken)
8 Slices Swiss cheese
1 Jalapeno, sliced
Sweet chili sauce
1. Preheat the oven to 180C (350F).
2. Assemble the pizzas by spreading the base with tomato paste and assembling the rest of the ingredients on top.
3. Bake for 10 - 15 minutes, until the cheese has melted and everything is hot.
4. Serve with a fresh green salad or fries.
