Chickpea {Chicken} Burgers

Chickpeas as the main ingredient in a burger might sound a little weird the first time you hear it, but I'll let you in on a secret.... they make the most AMAZING burger patties!

 


I can't actually take credit for this tower of a burger. This comes straight to you from the wonderful mind of my lovely fiance. He never likes to say so, but he is a fantastic cook and has a real talent in the kitchen. Everything he cooks turns out brilliant so I was delighted to get the opportunity to takes a few snaps of this one!


You'll see in the pictures that our burgers had both the chickpea pattie (on the bottom) and also a fried chicken pattie too. If you're wanting the vegetarian option, just omit the chicken and load up with more veges to go with your beautiful chickpea pattie!


These chickpea burgers have such a wonderful texture and flavor to them. The combination of heat of the spices with the freshness of the coriander, and zing of the lemon will be sure to make your taste buds sing!

Chickpea {Chicken} Burgers


Makes 4

Chickpea Burger Patties:

400 g can chickpeas, drained and rinsed
1 lemon, zest and juice
1 tsp ground cumin
1 tsp ground chili
1 tsp garlic powder
1 bunch coriander (cilantro) roughly chopped
1 egg
1/2 cob corn
100 g wholemeal breadcrumbs
1 red onion, diced
1 Tbsp olive oil

To Assemble:

4 burger buns, lightly toasted
Shredded lettuce
4 slices cheese
4 chicken burger patties (optional)
your favorite burger fillings - tomatoes etc.

1. Make the chickpea burgers by combining the chickpeas, lemon zest and juice, cumin, chili, garlic, coriander, egg, onion, and a bit of salt and pepper in the bowl of a food processor. Process until it all comes together.

2. Mix in 3/4 of the breadcrumbs and the corn. Shape into 4 burgers and press both sides in the remaining breadcrumbs to coat. Chill for about 10 minutes.

3. Heat the olive oil in a large fry pan and cook the patties for 5 minutes on each side, or until both sides are golden.

4. Assemble burgers and enjoy!
