Slow Cooker Chicken Tikka Masala

Tikka Masala is a delicious and simple Indian style curry. What's better, it can be made even easier in the slow cooker!

This is a great Indian curry, it's easy to prepare (just pop everything in the slow cooker!) and it uses simple ingredients and spices - nothing that you won't be able to find at your local supermarket.

I use chicken thighs in my curries as they are less prone to drying out. If chicken breast is easier to get and more affordable then please use breasts, just keep a closer eye on the cooking time to avoid dry meat.

Slow Cooker Chicken Tikka Masala

Serves 4

600 g chicken thighs, boneless and skinless
1/4 Cup low fat plain yogurt (I used Greek yogurt)
2 tsp paprika
1 onion, finely diced
4 cloves garlic, crushed
1 cm ginger, finely grated
2 Tbsp tomato paste
2 Tbsp garam masala
1 tsp cumin
1 red chili, finely diced
400 g can chopped tomatoes
3/4 Cup cream

1. Cut the chicken into bite sized pieces and marinade overnight in the yogurt and paprika.

2. Fry the onion and garlic in a fry pan over a medium-high heat for a couple of minutes, until the onion is fragrant and translucent. Add the garam masala, cumin, and tomato paste. Fry for another minute.

3. Place all ingredients in the slow cooker and cook on low for 8 hours.

4. Remove the slow cooker lid and turn up to high for the final 30 minutes to thicken the curry sauce.
