Oatmeal Chip Bars

My favorite cookies are always those packed full of oat. These Oatmeal Chip bars are loaded with oats and chocolate and are just delicious!

It's time again already for another installment of #FreakyFriday! If you haven't been following so far, we are a group of food bloggers who, a few times a year, get secretly assigned to a fellow members blog. We then pick something to make, and write all about it in a blog post. It's a lot of fun and a great way to find new and exciting blogs to follow.

This time we had a much more specific task - make a cookie or candy that you'd expect to see on a Christmas/Holiday platter. 





For this round I was assigned to Big Rigs 'n Lil' Cookies and oh was I spoiled for choice! This blog is run by the lovely Kris from southwest Wisconsin. Her "About Me" page on her blog is very different from what you're used to seeing, it consists of a list of 20 facts about Kris, it's well worth a read so check it out here.


After going through SO many recipes, and eventually being so indecisive that I got my fiancé to choice, I made Oatmeal Chip Bars. I had a whole heap of recipes bookmarked, that I'd love to make at some stage; Cake Cookie Bars, Honey Oatmeal Cookies with Dark Chocolate Chips, Monster Cookies, and Peanut Butter Picnic Bars.


These cookie bars are really fantastic - they are so easy to make, not too sweet, and have just the right amount of chocolate. Of course all those oats gives a great chew to them too!


Oatmeal Chip Bars


Makes about 16 bars

110 g Butter
1/2 Cup Peanut Butter
1 1/4 Cup Brown Sugar
3/4 Cup white sugar
2 eggs
1 tsp Vanilla Extract
2 Cup plain flour
2 tsp baking powder
1/2 tsp salt
2 Cups oats 
2 Cups chocolate chips

1. Preheat the oven to  190C (375F).  

2. Cream together the butter, peanut butter, sugars, eggs and vanilla in a large bowl until pale and fluffy.  

3. In a separate bowl, combine the flour, baking powder and salt; gradually add to the creamed mixture.  Fold in the oats and chocolate chips.  

4. Spread in a greased 10 x 15 rimmed metal pan, using a spatula or your hands to press into place.  Bake for 20 minutes, until golden on top. 

5. Cool, but cut the bars while still warm, as a knife will go through them more easily

  10. I love bar cookies...they are so much more forgiving (I have a tendency to forget my cookies). And my youngest son is a big oatmeal fan...this is perfect!
