Lemon and Coconut Brownies

I had some lemons left over from the dinner last night and I didn't want them to go to waste so whipped up a batch of these. Also decided to make these as I am sure my honey would love them! Nice and easy to make and always go down a treat.




Exactly one year on, I have come back to this post (my first ever recipe on PicNic) to share new photos. This recipe is absolutely fantastic, and I have made it dozens of times for various morning teas or birthdays. I am so happy that it finally has a decent photo - which I really think helps to show how far I have come over the past year.


Lemon and Coconut Brownies 


Makes about 18 pieces
 
250 g butter
2 Cups caster sugar
4 eggs
1.5 Cups plain flour
1 Cup desiccated coconut
1/4 Cup fresh lemon juice
Finely grated rind of one lemon
Icing sugar for dusting

1. Preheat oven to 180ÂșC, line a pan with non-stick baking paper, or grease with some extra butter. A good size pan is about 20 cm x 30 cm but just use whatever you have.

2. Melt the butter in a saucepan over a medium heat, remove from heat and stir in the sugar, then stir in the eggs one at a time, mixing well after each addition and mixing until the mixture looks nice and glossy.

3. Sift in the flour and stir to combine. Add the coconut, lemon juice, and lemon zest. Mix well and pour into the prepared dish.

4. Bake for about 30 minutes. To test if it is done, insert a skewer into the centre and check that it comes out clean. Leave in the pan until it is completely cooled and then dust with icing sugar and cut into about 18 pieces.
