I have a weakness for anything chocolate based. I just can't get enough. So when we had bananas that needed to be used up of course I needed to incorporate these into a chocolate fix.
Bananas are wonderful in brownies. They give the brownies such a moist texture. I like to leave my bananas in chunks, but you could mash them completely if you would prefer.
I originally made and posted these brownies at the start of the year but I have just remade and rephotographed to update the post.
Chocolate and Banana Brownies
Makes about 18 pieces
175 g dark (50% cocoa) chocolate
175 g unsweetened apple sauce
1 Cup brown sugar
3 medium overripe bananas, mashed.
1 tsp vanilla extract
2 eggs, lightly beaten
1 Cup self raising flour
3 tsp cocoa
1/2 Cup white chocolate chips
1. Preheat the oven to 180°C (350°F) and line a slice tin with baking paper.
2. Melt the chocolate together with the sugar and apple sauce in a saucepan over a medium-low heat. Once the chocolate is melted remove from heat and set aside.
3. Add the eggs to the mashed banana and mix. Add this to the chocolate mixture. Sift in the flour and cocoa and stir in the chocolate chips.
4. Pour into the prepared tin and bake for 30 minutes. Allow the brownie to cool before cutting into squares.
Looks so good! I never had bananas in my brownies but I'd like to try. :)

DeleteThese look delicious and I love that there is no added oil or sugar. Much better use for over ripe bananas than banana bread (I love banana bread but I prefer chocolate).

ReplyDeleteI'm from the US and I've not heard of a slice tin. What is it? Is it what we would call a cookie sheet with raised sides or maybe an 8 inch by 8 inch baking pan? The recipe sounds marvelous and healthy. I would love to try it.
