We love making pizzas on weekends, making the base then loading up with whatever delicious ingredients happen to be in the refrigerator. This pizza is a simple combination of beef steak and bacon. What's more to love?

Chocolate and Raspberry Calzones

Chocolate and Raspberry Calzones are a fun and delicious sweet twist on the Italian Calzone pizza. Hands up whose all for a dessert pizza?!


I absolutely adored this dessert. The calzones were easy to make, and once the pizza dough was made, quick too! The combination of ingredients makes this dessert a bit more pleasing to the waist line than my usual desserts - which I know a lot of you will love!

Chili Chicken Pita Bread Pizzas

Individual pita bread pizzas make a fun and easy meal, while making pizza a tiny bit healthier, too.


I was really going for a super quick Friday night dinner with this one. Because I was feeling especially lazy and I couldn't even be bothered cooking some chicken, I just grabbed a smoked chicken breast from the supermarket. I was really surprised by how well this worked with the other flavors of this pizza.

Chili Chicken Calzone

This was my first ever attempt at making a calzone! I know that this isn't a "traditional" calzone: with tomatoes and cheese but it was fantastic nonetheless.





Chili Chicken Calzone


Makes 2 large or 4 small

600 g chicken breast, cooked and shredded
1/2 Cup sweet chili sauce
1 tsp balsamic vinegar
1 red chili, sliced
1 red bell pepper
125 g Camembert 
1/2 tsp mixed herbs
2 Tbsp finely grated Parmesan
1 Tbsp garlic powder
1 Tbsp dried parsley


1. Make the pizza base following the directions in the link above (or here). Preheat the oven to 200ºC (390ºF). 

2.Mix together the chicken, chili sauce, balsamic, chili, bell pepper, and mixed herbs together in a bowl.
3. To make two large calzones, split the pizza dough in half, or into quarters to
make four smaller calzone. Roll out each piece into an oval.
4. Place some of the chicken mixture onto each oval dough
and top with a couple of slices of Camembert.

5. Fold the calzones by folding in the top and bottom edges, followed by the two long edges.

6. Top each calzone with some Parmesan, parsley, and garlic. Place on a pizza tray (a regular baking tray is fine too) and bake for about 20 minutes, until golden.

Lamb, Feta, and Caramelised Onion Pizza

Who doesn't love pizza? You're sure to love this combination of lamb, feta, and caramelised onion. It's simple to put together but tastes fantastic.





Lamb, Feta, and Caramelised Onion Pizza


Makes 8 slices

Pizza Base
Tomato paste (about 4 Tbsp, but depends on your taste)
1 Cup grated cheese (Edam, cheddar, mozzarella...) 
400 g lamb mince
1 cloves garlic, finely grated or crushed
100 g feta, (I used reduced fat)
1 Cup Caramelised Onions
2 tsp dried chilli flakes
2 tsp dried mixed herbs

1. Make the pizza base according to the instructions. Spread tomato paste over the base.

2. Heat a dash of oil in a fry pan over a medium heat, fry the lamb and garlic until lamb mince is browned. Set aside.

3. Sprinkle grated cheese over the pizza base, top with caramelised onion, lamb + garlic, and crumble feta over the top. Sprinkle with chilli flakes and mixed herbs.

4. Bake in the oven at 200°C for 15-20 minutes
 

Basic Pizza Dough

Here's a really easy pizza dough recipe.


Basic Pizza Dough


Makes 1 Pizza

1/2 Cup lukewarm water
1/2 tsp sugar
1 1/2 tsp dried active yeast
1 Cup plain flour (wholemeal flour works well too)
1/2 tsp salt
1 Tbsp olive oil

1. Combine the water and sugar in a small bowl. Sprinkle the yeast over the water and leave for about 15 minutes to activate the yeast. Activated yeast will look like this:

2. Sift the flour and salt into a large bowl. Make a well in the centre and pour in the yeast mixture and the olive oil. Stir with a wooden spoon to combine.

3. Turn out onto a floured surface and knead a few times and shape into a ball. Return to the bowl, cover with cling film or a tea-towel. Set aside for a while, in a warm environment, until the dough has doubled in size. I usually do this a few hours in advance and just leave it.

4. Roll out on a floured surface to form a pizza base. Prick the base with a fork at a couple of different locations. Add desired toppings and bake at 200°C for about 15 minutes. 

Tip: Pizza base will cook better if it's on a vented tray, like a pizza baking tray with holes in the base.
