The beautiful flavors of a Thai Green Curry are incorporated into this simple fried rice.
Asian cuisine is by far my favorite to both cook and eat. Most Asian-inspired dishes are quick and easy to prepare and the flavors are just wonderful. What I most love about Thai (and other South-East Asian) dishes is the beautiful, fresh flavors; especially owing to the coriander (cilantro) and lime.
If you're a regular around here you're probably rolling your eyes at this post, thinking "another green-curry based dish?!" Okay, so it's clearly a favorite of mine and so fun to play around with!
