Peppermint Fudge

This is the last recipe in my series of holiday season baking treats. This is a super simple recipe for peppermint fudge.

This fudge makes a wonderful gift. I gave most of this to friends and got such great feedback.

Since this is just white chocolate and peppermint, you might be wondering what the dark chunks are? Well... I was baking about 4 things at once and I wasn't paying attention and I burnt the sugar... oops. But on the plus side, it didn't affect the taste at all :)

Christmas Cake

Peppermint Fudge

Makes about 20 pieces

1 can light condensed milk
1 1/4 Cup white sugar
120 g (4 oz) butter
200 g (7 oz) white chocolate
2 tsp peppermint essence
2 candy canes, crushed

1. Line a pan or dish with baking paper.

2. Combine the condensed milk, sugar, and butter in a medium saucepan over a low heat. Heat for around 8 minutes, stirring often.

3. Add the chocolate and stir until melted. Remove from heat and add the peppermint essence. Check the taste, and add more peppermint if desired.

4. Pour into the pan, sprinkle over crushed candy cane and chill until set. Cut into squares and store in an airtight container.
