This months Secret Recipe Club assignment came from the beautiful blog Tea and Scones. Again, this was another new blog for me and I loved it. This page is a lovely combination of baking and main meal recipes - including lots of great recipes from great cookbooks. I was delighted to see that Margret is also a great fan of Australian cookbook author, Donna Hay. This recipe that I am posting today is actually a modification of a beautiful and simple Donna Hay curry. You can find the original Tea and Scones recipe here.
This simple chicken and coconut curry was quick, easy, and packed full of deliciousness. I know that at first glance this seems pretty similar to another recipe I have already posted here on PicNic, but I can tell you that they are completely different. Although both are coconut based, the other flavors in the two dishes are completely different.
The original recipe called for sweet potato rather than regular potato - I really dislike sweet potato so substituted in normal potato. It tasted lovely with regular potato but if you like sweet potato then go ahead with using that!
Chicken Poached in Coconut Curry
Serves 4
3 Tbsp red curry paste
6 chicken thighs, halved
2 large potatoes, diced
2 cups chicken stock
400 mL can coconut milk
1 red chili, finely diced
1 red bell pepper, diced
1 bunch cilantro leaves, roughly chopped
1. Place the curry paste in a large saucepan over a medium heat. Fry for 1-2 minutes, until fragrant.
2. Add the chicken, potato, and chili, and bell pepper and cook for 2 minutes.
3. Add the stock and coconut milk, reduce heat to low and simmer gently for about 20 minutes, until the chicken and potato are cooked.
4. Remove from heat and stir through the cilantro. Serve over rice.
