Steak and Egg Sandwich

During my short stay in Argentina, I noticed that they add scrambled egg to everything. Go anywhere selling food and you'll find french fries topped with egg, hot dogs with egg, grilled steak with egg... 

On a few occasions at a few different places I ordered a steak sandwich. Everyone knows Argentina for its steak so I had to make the most of it, right? On each occasion, the sandwich was also loaded full of scrambled egg. It tastes AMAZING!



When  Emmet asked the usual question "what's for dinner" on this particular night, I could immediately see the look of confusion on his face when I announced steak and scrambled egg sandwiches. His unease continued all afternoon, when he finally got to take a bite he loved it. And you will too! 

Although I was there for a conference, I did have more than enough time to explore both Santiago and Córdoba - of course that means trying as much traditional foods as I could! I still have so many delicious treats I want to share with you from South America - sooo much with dulce de leche!

In the meantime, I wanted to share with you a picture taken at the conference, right after I gave my talk! This is part of the wonderful New Zealand and Australia Battens disease research group. Let's hope they don't read my blog :)


Steak and Egg Sandwich

Serves 4

4 Bread rolls
300 g (10.5 oz) beef steak
8 rashers streaky bacon
6 eggs, scrambled with milk and seasoned
4 slices cheese
1 Cup lettuce, shredded
1 tomato, sliced
Your favorite sauce - ketchup, sweet chili, mayonnaise...

1.  Heat a cast iron skillet over a high heat. Season the steak with salt and pepper on both sides and drizzle with a bit of olive oil. Cook until done to your liking. Remove from the pan, cover with foil, and allow to rest for about 10 minutes.

2. Cook the bacon until crispy. Toast the bread rolls. Assemble burgers with steak, bacon, cheese, eggs, lettuce, and tomato.
